
Healthy Mexican Chicken Lettuce Wrap

Ingredients:
- 2 Boneless chicken breasts
- 1 tablespoon Olive oil
- 2 Garlic cloves
- 1 teaspoon Chili powder
- 1 teaspoon Cumin
- 1/4 cup Chopped fresh cilantro
- 1 Lime
- 1/2 teaspoon Salt
- 1/4 teaspoon Black pepper
- 8 Large lettuce leaves
- 1 cup Avocado slices
- 1/2 cup Salsa
Instructions:
- Heat the oil in a pan over medium heat. Add the chopped garlic and stir for a minute until fragrant.
- Add the chicken breasts to the pan and season with chili powder, cumin, salt, and black pepper. Cook for about 6-7 minutes on each side, or until the chicken is cooked through and no longer pink in the center.
- Remove the chicken from the pan and allow it to rest for a few minutes. After it has rested, chop the chicken into small pieces.
- Return the chopped chicken to the pan and squeeze the juice of one lime over the top. Stir in the chopped cilantro. Cook for 2-3 minutes, just until everything is heated through.
- To serve, spoon the chicken mixture onto the lettuce leaves. Top with avocado slices and a spoonful of salsa. Enjoy!
