Healthy Mexican Chicken Lettuce Wrap

Ingredients:

  • 2 Boneless chicken breasts
  • 1 tablespoon Olive oil
  • 2 Garlic cloves
  • 1 teaspoon Chili powder
  • 1 teaspoon Cumin
  • 1/4 cup Chopped fresh cilantro
  • 1 Lime
  • 1/2 teaspoon Salt
  • 1/4 teaspoon Black pepper
  • 8 Large lettuce leaves
  • 1 cup Avocado slices
  • 1/2 cup Salsa

Instructions:

  1. Heat the oil in a pan over medium heat. Add the chopped garlic and stir for a minute until fragrant.
  2. Add the chicken breasts to the pan and season with chili powder, cumin, salt, and black pepper. Cook for about 6-7 minutes on each side, or until the chicken is cooked through and no longer pink in the center.
  3. Remove the chicken from the pan and allow it to rest for a few minutes. After it has rested, chop the chicken into small pieces.
  4. Return the chopped chicken to the pan and squeeze the juice of one lime over the top. Stir in the chopped cilantro. Cook for 2-3 minutes, just until everything is heated through.
  5. To serve, spoon the chicken mixture onto the lettuce leaves. Top with avocado slices and a spoonful of salsa. Enjoy!
