Healthy Mexican Chicken Fajita

Ingredients:

  • 2 whole Boneless, skinless chicken breast
  • 1 whole Red Bell Pepper
  • 1 whole Green Bell Pepper
  • 1 medium Onion
  • 1 tablespoon Olive Oil
  • 8 pieces Whole Wheat Tortillas
  • 2 cloves Garlic cloves
  • 1 whole Lime
  • 1 teaspoon Ground cumin
  • 1 teaspoon Chili Powder
  • to taste Salt
  • to taste Black pepper

Instructions:

  1. Cut the chicken into strips and season with salt, pepper, cumin, and chili.
  2. Heat the olive oil in a pan over medium heat. Add the chicken and cook until browned and cooked through, about 5 to 7 minutes.
  3. Slice the bell peppers and onion. Add to the pan along with minced garlic, cook until they soften and start to caramelize.
  4. Squeeze lime over fajita mixture in the pan and stir to combine.
  5. Heat up the whole wheat tortillas on a griddle or directly over the flame on your stove. Be sure to keep them moving to avoid burning.
  6. Place a portion of the chicken and vegetable mix on a tortilla, roll it up and serve warm.
