
Healthy Mexican Chicken Fajita

Ingredients:
- 2 whole Boneless, skinless chicken breast
- 1 whole Red Bell Pepper
- 1 whole Green Bell Pepper
- 1 medium Onion
- 1 tablespoon Olive Oil
- 8 pieces Whole Wheat Tortillas
- 2 cloves Garlic cloves
- 1 whole Lime
- 1 teaspoon Ground cumin
- 1 teaspoon Chili Powder
- to taste Salt
- to taste Black pepper
Instructions:
- Cut the chicken into strips and season with salt, pepper, cumin, and chili.
- Heat the olive oil in a pan over medium heat. Add the chicken and cook until browned and cooked through, about 5 to 7 minutes.
- Slice the bell peppers and onion. Add to the pan along with minced garlic, cook until they soften and start to caramelize.
- Squeeze lime over fajita mixture in the pan and stir to combine.
- Heat up the whole wheat tortillas on a griddle or directly over the flame on your stove. Be sure to keep them moving to avoid burning.
- Place a portion of the chicken and vegetable mix on a tortilla, roll it up and serve warm.
