Healthy Mexican Breakfast Rice Bowl

Ingredients:

  • 1 cup Brown Rice
  • 1 cup Black Beans
  • 1 piece Avocado
  • 0.5 cup Cherry Tomatoes
  • 0.25 cup Red Onion
  • 1 tablespoon Cilantro
  • 0.5 piece Lime
  • 1 tablespoon Olive oil
  • 2 piece Egg
  • to taste Salt
  • to taste Pepper

Instructions:

  1. Cook the brown rice according to the instructions on the package.
  2. While the rice is cooking, prepare the salsa by mixing together the tomatoes, red onion, cilantro, lime juice, and a bit of salt.
  3. Heat a skillet over medium heat with the olive oil. Add the black beans and cook until they're heated through, about 5 minutes.
  4. In another skillet, fry the eggs to your preference.
  5. Slice the avocado.
  6. Once the rice is done, divide it between two bowls.
  7. Top each bowl with the heated black beans, slices of avocado, a dollop of salsa, and a fried egg.
  8. Season with salt and pepper to taste. Serve immediately, enjoy your healthy Mexican breakfast rice bowl!
