
Healthy Mexican Breakfast Rice Bowl

Ingredients:
- 1 cup Brown Rice
- 1 cup Black Beans
- 1 piece Avocado
- 0.5 cup Cherry Tomatoes
- 0.25 cup Red Onion
- 1 tablespoon Cilantro
- 0.5 piece Lime
- 1 tablespoon Olive oil
- 2 piece Egg
- to taste Salt
- to taste Pepper
Instructions:
- Cook the brown rice according to the instructions on the package.
- While the rice is cooking, prepare the salsa by mixing together the tomatoes, red onion, cilantro, lime juice, and a bit of salt.
- Heat a skillet over medium heat with the olive oil. Add the black beans and cook until they're heated through, about 5 minutes.
- In another skillet, fry the eggs to your preference.
- Slice the avocado.
- Once the rice is done, divide it between two bowls.
- Top each bowl with the heated black beans, slices of avocado, a dollop of salsa, and a fried egg.
- Season with salt and pepper to taste. Serve immediately, enjoy your healthy Mexican breakfast rice bowl!
