Healthy Mexican Beef Salad Bowl

Ingredients:

  • 500 grams Beef strips
  • 2 pieces Ripe avocados
  • 2 tablespoons Fresh lime juice
  • 1 cup Cherry tomatoes
  • 1 small Red onion
  • 1 can Black beans
  • 1 cup Fresh corn kernels
  • 1 bunch Fresh coriander
  • 2 tablespoon Olive oil
  • 1 teaspoon Ground cumin
  • 1 teaspoon Chili powder
  • To taste Salt
  • To taste Pepper

Instructions:

  1. 1. Cut the beef into thin slices.
  2. 2. Heat 1 tablespoon olive oil in a frying pan over medium-high heat. Add the beef and season with cumin, chili powder, salt and pepper. Cook until browned.
  3. 3. While the beef is cooking, prepare the salad. Dice the avocados and put them in a large bowl. Add the lime juice and gently toss.
  4. 4. Dice the red onion and chop the coriander. Add these to the bowl along with the black beans, corn and cherry tomatoes.
  5. 5. Make a simple dressing with the remaining olive oil, a bit more lime juice, salt and pepper.
  6. 6. Once the beef is cooked, add it to the bowl with the salad and pour over the dressing. Gently mix until everything is well combined.
  7. 7. Serve immediately, garnishing with extra coriander if desired.
