
Healthy Mexican Beef Salad Bowl

Ingredients:
- 500 grams Beef strips
- 2 pieces Ripe avocados
- 2 tablespoons Fresh lime juice
- 1 cup Cherry tomatoes
- 1 small Red onion
- 1 can Black beans
- 1 cup Fresh corn kernels
- 1 bunch Fresh coriander
- 2 tablespoon Olive oil
- 1 teaspoon Ground cumin
- 1 teaspoon Chili powder
- To taste Salt
- To taste Pepper
Instructions:
- 1. Cut the beef into thin slices.
- 2. Heat 1 tablespoon olive oil in a frying pan over medium-high heat. Add the beef and season with cumin, chili powder, salt and pepper. Cook until browned.
- 3. While the beef is cooking, prepare the salad. Dice the avocados and put them in a large bowl. Add the lime juice and gently toss.
- 4. Dice the red onion and chop the coriander. Add these to the bowl along with the black beans, corn and cherry tomatoes.
- 5. Make a simple dressing with the remaining olive oil, a bit more lime juice, salt and pepper.
- 6. Once the beef is cooked, add it to the bowl with the salad and pour over the dressing. Gently mix until everything is well combined.
- 7. Serve immediately, garnishing with extra coriander if desired.
