
Healthy Mediterranean Chicken Pita

Ingredients:
- 4 Chicken breast
- 4 Whole wheat pita bread
- 1 cup Greek yogurt
- 1 Cucumber
- 1 Tomato
- 1 Red onion
- 1 Garlic clove
- 2 tbsp Olive oil
- 1 tbsp Lemon juice
- 1 tsp Oregano
- to taste Salt and pepper
- a handful Fresh parsley
Instructions:
- First, prep the vegetables. Dice the cucumber, tomato, and onion. Finely chop the garlic and parsley.
- In a bowl, combine the Greek yogurt, garlic, lemon juice, and a pinch of salt and pepper. This will be your sauce.
- Heat the olive oil in a pan over medium heat.
- Season the chicken breasts with the oregano, salt, and pepper, and then cook them in the pan for about 5-7 minutes on each side, or until they're no longer pink in the middle.
- Once the chicken is done, let it rest for a few minutes, then cut it into thin slices.
- Warm up the pita bread in the oven or on a grill.
- To assemble the pitas, spread a bit of the yogurt sauce on each one, top with chicken, and then add the diced veggies.
- Garnish with the fresh parsley, then fold the pita over and enjoy!
