Healthy Mediterranean Chicken Pita

Ingredients:

  • 4 Chicken breast
  • 4 Whole wheat pita bread
  • 1 cup Greek yogurt
  • 1 Cucumber
  • 1 Tomato
  • 1 Red onion
  • 1 Garlic clove
  • 2 tbsp Olive oil
  • 1 tbsp Lemon juice
  • 1 tsp Oregano
  • to taste Salt and pepper
  • a handful Fresh parsley

Instructions:

  1. First, prep the vegetables. Dice the cucumber, tomato, and onion. Finely chop the garlic and parsley.
  2. In a bowl, combine the Greek yogurt, garlic, lemon juice, and a pinch of salt and pepper. This will be your sauce.
  3. Heat the olive oil in a pan over medium heat.
  4. Season the chicken breasts with the oregano, salt, and pepper, and then cook them in the pan for about 5-7 minutes on each side, or until they're no longer pink in the middle.
  5. Once the chicken is done, let it rest for a few minutes, then cut it into thin slices.
  6. Warm up the pita bread in the oven or on a grill.
  7. To assemble the pitas, spread a bit of the yogurt sauce on each one, top with chicken, and then add the diced veggies.
  8. Garnish with the fresh parsley, then fold the pita over and enjoy!
