Healthy Late-Night Italian Pork Skillet

Ingredients:

  • 2 boneless pork loin chops
  • 2 tbsp olive oil
  • 2 garlic cloves
  • 1 tsp Italian seasoning
  • 2 tomatoes
  • 2 cups spinach
  • 0.5 tsp salt
  • 0.5 tsp pepper

Instructions:

  1. Season the pork loin chops with salt, pepper, and Italian seasoning. Set aside.
  2. In a large skillet, heat the olive oil over medium heat.
  3. Add the seasoned pork to the skillet and cook until browned on each side, about 4-5 minutes.
  4. Remove the pork from the skillet and set aside.
  5. In the same skillet, add the garlic and cook until fragrant.
  6. Add the tomatoes and cook until they begin to break down.
  7. Add the spinach and cook until wilted.
  8. Return the pork chops to the skillet and cook on each side for an additional minute or until the pork is cooked through.
  9. Serve the pork with the tomato and spinach mixture.
