
Healthy Late-Night Italian Pork Skillet

Ingredients:
- 2 boneless pork loin chops
- 2 tbsp olive oil
- 2 garlic cloves
- 1 tsp Italian seasoning
- 2 tomatoes
- 2 cups spinach
- 0.5 tsp salt
- 0.5 tsp pepper
Instructions:
- Season the pork loin chops with salt, pepper, and Italian seasoning. Set aside.
- In a large skillet, heat the olive oil over medium heat.
- Add the seasoned pork to the skillet and cook until browned on each side, about 4-5 minutes.
- Remove the pork from the skillet and set aside.
- In the same skillet, add the garlic and cook until fragrant.
- Add the tomatoes and cook until they begin to break down.
- Add the spinach and cook until wilted.
- Return the pork chops to the skillet and cook on each side for an additional minute or until the pork is cooked through.
- Serve the pork with the tomato and spinach mixture.
