
Healthy Japanese Tamagoyaki (Japanese Rolled Omelette) for Midnight Cravings

Ingredients:
- 4 large Eggs
- 2 teaspoons Soy Sauce
- 2 teaspoons Mirin
- 1 teaspoon Sugar
- to taste Salt
- 2 teaspoons Vegetable Oil
Instructions:
- In a bowl, beat the eggs gently, then add the soy sauce, mirin, sugar, and salt.
- Heat 1 tsp of vegetable oil in a non-stick pan over medium heat.
- Pour a portion of the egg mixture into the pan and spread evenly. Once the egg starts to set, roll it towards one end of the pan using a spatula.
- Move the rolled egg to the side where you have been rolling up. If there's not enough oil, lightly oil the pan each time you roll up.
- Pour more egg mixture to cover the bottom of the pan and let it flow underneath the rolled egg. Once that starts to set, roll the egg again, starting from the side with the rolled egg.
- Continue the process until all the egg mixture is used.
- Remove from the heat and let it cool a bit before cutting the rolled egg into bite-size pieces.
- Serve immediately with some soy sauce on the side for dipping, if desired.
