Healthy Japanese Rice Bowl

Ingredients:

  • 2 cups Short grain rice
  • 2 cups Water
  • 2 tablespoons Soy sauce
  • 1 tablespoon Mirin
  • 1 pound Skinless boneless chicken breast
  • 2 cups Broccoli florets
  • 1 large Carrot
  • 2 stalks Scallions

Instructions:

  1. Rinse the rice under cold water until the water runs clear. Add rice and water into a medium pot and bring to a boil.
  2. Once boiling, reduce heat to low, cover the pot and let it simmer for 15-20 minutes, or until the water is absorbed.
  3. While the rice is cooking, cut the chicken into bite-size pieces, slice the carrot into thin sticks, and chop the scallions.
  4. Heat some oil in a pan over medium-high heat. Add chicken to the pan and cook until browned and cooked through. Remove chicken and set aside.
  5. In the same pan, add the carrots and cook for 2-3 minutes. Then add broccoli and cook until just tender. Return the chicken to the pan.
  6. In a small bowl, combine soy sauce and mirin. Pour the mixture over the chicken and vegetables, stir well to combine.
  7. Spoon the cooked rice into bowls. Top with the chicken and vegetable mix, and sprinkle with chopped scallions. Serve while hot.
