
Healthy Japanese Rice Bowl

Ingredients:
- 2 cups Short grain rice
- 2 cups Water
- 2 tablespoons Soy sauce
- 1 tablespoon Mirin
- 1 pound Skinless boneless chicken breast
- 2 cups Broccoli florets
- 1 large Carrot
- 2 stalks Scallions
Instructions:
- Rinse the rice under cold water until the water runs clear. Add rice and water into a medium pot and bring to a boil.
- Once boiling, reduce heat to low, cover the pot and let it simmer for 15-20 minutes, or until the water is absorbed.
- While the rice is cooking, cut the chicken into bite-size pieces, slice the carrot into thin sticks, and chop the scallions.
- Heat some oil in a pan over medium-high heat. Add chicken to the pan and cook until browned and cooked through. Remove chicken and set aside.
- In the same pan, add the carrots and cook for 2-3 minutes. Then add broccoli and cook until just tender. Return the chicken to the pan.
- In a small bowl, combine soy sauce and mirin. Pour the mixture over the chicken and vegetables, stir well to combine.
- Spoon the cooked rice into bowls. Top with the chicken and vegetable mix, and sprinkle with chopped scallions. Serve while hot.
