Healthy Japanese Pork Stir-Fry

Ingredients:

  • 500 grams Lean pork loin
  • 1 tablespoon Sesame oil
  • 1 unit Garlic clove
  • 1 tablespoon Fresh ginger
  • 1 cup Broccoli
  • 1 unit Carrot
  • 1 unit Red bell pepper
  • 3 tablespoons Soy sauce low sodium
  • 2 cups Brown rice

Instructions:

  1. Prepare the vegetables and ginger then set aside.
  2. Slice the pork loin into thin strips.
  3. Heat the sesame oil in a large wok or frying pan over medium-high heat.
  4. Add the pork strips and stir-fry for about 5 to 7 minutes, until they're browned. Remove the pork from the pan and set aside.
  5. In the same pan, add the garlic, ginger, broccoli, sliced carrot, and bell pepper. Stir-fry for about 3 minutes.
  6. Return the pork to the pan. Add the soy sauce and stir to combine everything.
  7. Serve the stir-fry over brown rice.
