Healthy Japanese Chicken Teriyaki Bowl

Ingredients:

  • 2 pieces Boneless skinless chicken breasts
  • 1/2 cup Teriyaki Sauce
  • 1 cup Broccoli
  • 1 cup Bell pepper
  • 1 cup Carrots
  • 1 cup Brown rice
  • 2 stalks Green onions
  • 1 tsp Sesame seeds
  • 1 tbsp Olive oil

Instructions:

  1. Cook the brown rice as per the package instructions and set aside.
  2. In a large pan, heat the olive oil over medium-high heat.
  3. Add the chicken breast to the pan and cook until golden brown on both sides, about 7-10 minutes. Once the chicken is cooked, remove from heat and set aside.
  4. In the same pan, add broccoli, bell pepper, and carrots. Stir-fry the vegetables over medium-high heat for about 5 minutes, until they are tender, but still crisp.
  5. Slice the cooked chicken into strips and add back into the pan with the vegetables.
  6. Pour the teriyaki sauce over the chicken and vegetables, allowing them to simmer together for a few minutes until the sauce has thickened slightly.
  7. Serve the chicken and vegetables over the brown rice. Garnish with sesame seeds and chopped green onions. Enjoy your healthy midnight meal!
