
Healthy Japanese Chicken Teriyaki Bowl

Ingredients:
- 2 pieces Boneless skinless chicken breasts
- 1/2 cup Teriyaki Sauce
- 1 cup Broccoli
- 1 cup Bell pepper
- 1 cup Carrots
- 1 cup Brown rice
- 2 stalks Green onions
- 1 tsp Sesame seeds
- 1 tbsp Olive oil
Instructions:
- Cook the brown rice as per the package instructions and set aside.
- In a large pan, heat the olive oil over medium-high heat.
- Add the chicken breast to the pan and cook until golden brown on both sides, about 7-10 minutes. Once the chicken is cooked, remove from heat and set aside.
- In the same pan, add broccoli, bell pepper, and carrots. Stir-fry the vegetables over medium-high heat for about 5 minutes, until they are tender, but still crisp.
- Slice the cooked chicken into strips and add back into the pan with the vegetables.
- Pour the teriyaki sauce over the chicken and vegetables, allowing them to simmer together for a few minutes until the sauce has thickened slightly.
- Serve the chicken and vegetables over the brown rice. Garnish with sesame seeds and chopped green onions. Enjoy your healthy midnight meal!
