Healthy Japanese Brown Rice Stir-fry

Ingredients:

  • 2 cups Brown Rice
  • 1 tablespoon Sesame Oil
  • 1 Red Bell Pepper
  • 1 Carrot
  • 1 Zucchini
  • 2 stalks Green Onion
  • 2 tablespoons Soy Sauce
  • 2 Egg
  • 100 grams Tofu
  • 1 tablespoon Sesame Seeds

Instructions:

  1. Start by cooking the brown rice as per instructions on the package.
  2. Cut red bell pepper, carrot, zucchini, and green onion into fine slices.
  3. Heat sesame oil in a wok on medium heat.
  4. Stir in the vegetables and tofu, and cook for about 5 minutes until they are slightly tender.
  5. Add the cooked brown rice, soy sauce and the beaten eggs, stir until well combined.
  6. Cook for a few more minutes until everything is heated through.
  7. Serve your healthy Japanese brown rice stir-fry with a sprinkle of sesame seeds on top.
