Healthy Italian Roasted Vegetables

Ingredients:

  • 2 whole Zucchini
  • 2 whole Bell peppers
  • 1 whole Red onion
  • 1 cup Cherry tomatoes
  • 3 tbsp Extra virgin olive oil
  • 2 tsp Italian seasoning
  • to taste Salt
  • to taste Black pepper
  • for garnish Basil leaves

Instructions:

  1. Preheat the oven to 425 degrees Fahrenheit.
  2. Cut the zucchini, bell peppers, and red onion into 1-inch pieces.
  3. Place all the vegetables in a large bowl. Add the cherry tomatoes.
  4. Drizzle the vegetables with olive oil, and sprinkle with Italian seasoning, salt, and black pepper. Toss to combine.
  5. Spread the vegetables in a single layer on a baking sheet.
  6. Roast for 30 minutes, stirring halfway through, until the vegetables are tender and slightly charred.
  7. Garnish with fresh basil leaves before serving.
