
Healthy Italian Roasted Vegetables

Ingredients:
- 2 whole Zucchini
- 2 whole Bell peppers
- 1 whole Red onion
- 1 cup Cherry tomatoes
- 3 tbsp Extra virgin olive oil
- 2 tsp Italian seasoning
- to taste Salt
- to taste Black pepper
- for garnish Basil leaves
Instructions:
- Preheat the oven to 425 degrees Fahrenheit.
- Cut the zucchini, bell peppers, and red onion into 1-inch pieces.
- Place all the vegetables in a large bowl. Add the cherry tomatoes.
- Drizzle the vegetables with olive oil, and sprinkle with Italian seasoning, salt, and black pepper. Toss to combine.
- Spread the vegetables in a single layer on a baking sheet.
- Roast for 30 minutes, stirring halfway through, until the vegetables are tender and slightly charred.
- Garnish with fresh basil leaves before serving.
