
Healthy Italian Rice Risotto

Ingredients:
- 2 tablespoons olive oil
- 1 whole, finely chopped onion
- 2 cloves, finely chopped garlic
- 1 cup arborio rice
- 1 cup white wine
- 4 cups vegetable stock
- 2 cups, lightly packed spinach
- 0.5 cup, freshly grated Parmesan cheese
- to taste salt and pepper
Instructions:
- Heat the olive oil in a large, deep skillet over medium heat. Add the onion and garlic, sauté until they are soft and translucent.
- Add the arborio rice to the skillet and stir it around until every grain is coated with oil. Let the rice toast for a couple of minutes until it begins to turn golden.
- Pour in the white wine and stir the rice, letting it fully absorb the liquid.
- Begin adding the vegetable stock one cup at a time. After each addition, stir the risotto and wait until the liquid has almost fully absorbed before adding the next cup.
- After all the vegetable stock has been added and absorbed, stir in the spinach until it wilts and mixes into the risotto.
- Finally, stir in the Parmesan cheese and season with salt and pepper to taste. Serve immediately while the risotto is still creamy and delicious.
