Healthy Italian Rice Risotto

Ingredients:

  • 2 tablespoons olive oil
  • 1 whole, finely chopped onion
  • 2 cloves, finely chopped garlic
  • 1 cup arborio rice
  • 1 cup white wine
  • 4 cups vegetable stock
  • 2 cups, lightly packed spinach
  • 0.5 cup, freshly grated Parmesan cheese
  • to taste salt and pepper

Instructions:

  1. Heat the olive oil in a large, deep skillet over medium heat. Add the onion and garlic, sauté until they are soft and translucent.
  2. Add the arborio rice to the skillet and stir it around until every grain is coated with oil. Let the rice toast for a couple of minutes until it begins to turn golden.
  3. Pour in the white wine and stir the rice, letting it fully absorb the liquid.
  4. Begin adding the vegetable stock one cup at a time. After each addition, stir the risotto and wait until the liquid has almost fully absorbed before adding the next cup.
  5. After all the vegetable stock has been added and absorbed, stir in the spinach until it wilts and mixes into the risotto.
  6. Finally, stir in the Parmesan cheese and season with salt and pepper to taste. Serve immediately while the risotto is still creamy and delicious.
