Healthy Italian Rice Balls

Ingredients:

  • 1 cup Arborio Rice
  • 2 tbsp Olive oil
  • 1 small Yellow Onion
  • 2 cloves Garlic
  • 2.5 cups Low Sodium Chicken Broth
  • 0.5 cup Parmesan Cheese
  • 1 cup Whole Wheat Breadcrumbs
  • 2 Eggs
  • to taste Salt
  • to taste Pepper

Instructions:

  1. Heat the olive oil in a large saucepan over medium heat. Add the onion and garlic and cook until softened, about 5 minutes.
  2. Stir in the rice to coat with the oil. Then add the chicken broth. Bring to a boil then reduce the heat to low, cover, and let simmer until the liquid is fully absorbed, about 20 minutes.
  3. Remove from heat and let cool. Mix in the Parmesan cheese. Roll into small balls, about 1 inch in diameter.
  4. Whisk the eggs in a small bowl. In a separate bowl, place the breadcrumbs. Dip each rice ball first in the egg, then roll in the breadcrumbs to coat.
  5. Bake at 375 degrees F for 20-25 minutes, or until golden brown. Season with salt and pepper to taste. Serve immediately.
