
Healthy Italian Rice Balls

Ingredients:
- 1 cup Arborio Rice
- 2 tbsp Olive oil
- 1 small Yellow Onion
- 2 cloves Garlic
- 2.5 cups Low Sodium Chicken Broth
- 0.5 cup Parmesan Cheese
- 1 cup Whole Wheat Breadcrumbs
- 2 Eggs
- to taste Salt
- to taste Pepper
Instructions:
- Heat the olive oil in a large saucepan over medium heat. Add the onion and garlic and cook until softened, about 5 minutes.
- Stir in the rice to coat with the oil. Then add the chicken broth. Bring to a boil then reduce the heat to low, cover, and let simmer until the liquid is fully absorbed, about 20 minutes.
- Remove from heat and let cool. Mix in the Parmesan cheese. Roll into small balls, about 1 inch in diameter.
- Whisk the eggs in a small bowl. In a separate bowl, place the breadcrumbs. Dip each rice ball first in the egg, then roll in the breadcrumbs to coat.
- Bake at 375 degrees F for 20-25 minutes, or until golden brown. Season with salt and pepper to taste. Serve immediately.
