Healthy Italian Frittata

Ingredients:

  • 4 units Eggs
  • 1 cup Spinach
  • 0.5 cup Bell peppers
  • 0.5 cup Onion
  • 2 units Garlic cloves
  • 1 tablespoon Olive oil
  • 0.5 cup Cherry tomatoes
  • 1 teaspoon Italian seasoning
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper
  • a handful Fresh basil

Instructions:

  1. Preheat the oven to 350 degrees F (175 degrees C).
  2. In a bowl, beat the eggs and stir in the Italian seasoning, salt, and pepper.
  3. Heat the olive oil in an oven-safe skillet over medium heat. Saute the onion, bell pepper, and garlic until tender.
  4. Add in the spinach and saute until wilted.
  5. Pour the egg mixture into the skillet and scatter the cherry tomatoes on top.
  6. Cook for a few minutes until the edges start to pull away from the sides of the pan.
  7. Transfer the skillet to the preheated oven and bake for 10-15 minutes, until the frittata is set.
  8. Serve warm, topped with fresh basil.
