
Healthy Italian Frittata

Ingredients:
- 4 units Eggs
- 1 cup Spinach
- 0.5 cup Bell peppers
- 0.5 cup Onion
- 2 units Garlic cloves
- 1 tablespoon Olive oil
- 0.5 cup Cherry tomatoes
- 1 teaspoon Italian seasoning
- 0.5 teaspoon Salt
- 0.25 teaspoon Black pepper
- a handful Fresh basil
Instructions:
- Preheat the oven to 350 degrees F (175 degrees C).
- In a bowl, beat the eggs and stir in the Italian seasoning, salt, and pepper.
- Heat the olive oil in an oven-safe skillet over medium heat. Saute the onion, bell pepper, and garlic until tender.
- Add in the spinach and saute until wilted.
- Pour the egg mixture into the skillet and scatter the cherry tomatoes on top.
- Cook for a few minutes until the edges start to pull away from the sides of the pan.
- Transfer the skillet to the preheated oven and bake for 10-15 minutes, until the frittata is set.
- Serve warm, topped with fresh basil.
