
Healthy Italian Chicken Salad

Ingredients:
- 2 whole Chicken breasts
- 2 teaspoons Italian seasoning
- juice of 1 Lemon
- 2 tablespoons Olive oil
- 1 head Romaine lettuce
- 1 cup Cherry tomatoes
- 1 whole Cucumber
- 1/4 whole Red onions
- 1/2 cup Black olives
- 1/2 cup Feta cheese
Instructions:
- Season the chicken breasts with Italian seasoning, lemon juice, salt, pepper and 1 tablespoon olive oil. Let them marinate for 15 minutes.
- Preheat a grill pan or skillet over medium heat. Add the marinated chicken and cook for 6-7 minutes on each side or until the internal temperature reaches 165F.
- While the chicken is cooking, chop the romaine lettuce and place it in a large bowl.
- Add the cherry tomatoes, sliced cucumber, sliced red onions, black olives and feta cheese to the bowl with the lettuce.
- Once the chicken is done, let it rest for 5 minutes then slice it into thin pieces.
- Top the salad with the sliced chicken and drizzle with the remaining olive oil. Toss everything together until well combined.
- Serve the salad immediately with a side of whole grain bread if desired.
