Healthy Italian Chicken Salad

Ingredients:

  • 2 whole Chicken breasts
  • 2 teaspoons Italian seasoning
  • juice of 1 Lemon
  • 2 tablespoons Olive oil
  • 1 head Romaine lettuce
  • 1 cup Cherry tomatoes
  • 1 whole Cucumber
  • 1/4 whole Red onions
  • 1/2 cup Black olives
  • 1/2 cup Feta cheese

Instructions:

  1. Season the chicken breasts with Italian seasoning, lemon juice, salt, pepper and 1 tablespoon olive oil. Let them marinate for 15 minutes.
  2. Preheat a grill pan or skillet over medium heat. Add the marinated chicken and cook for 6-7 minutes on each side or until the internal temperature reaches 165F.
  3. While the chicken is cooking, chop the romaine lettuce and place it in a large bowl.
  4. Add the cherry tomatoes, sliced cucumber, sliced red onions, black olives and feta cheese to the bowl with the lettuce.
  5. Once the chicken is done, let it rest for 5 minutes then slice it into thin pieces.
  6. Top the salad with the sliced chicken and drizzle with the remaining olive oil. Toss everything together until well combined.
  7. Serve the salad immediately with a side of whole grain bread if desired.
