Healthy Italian Chicken Piccata

Ingredients:

  • 4 Boneless, skinless chicken breasts
  • To taste Salt and pepper
  • 1/4 cup All-purpose flour
  • 2 tablespoons Extra-virgin olive oil
  • 2 minced Garlic cloves
  • 1 cup Chicken broth
  • 1/4 cup Freshly squeezed lemon juice
  • 1/4 cup Capers
  • 1/4 cup Chopped fresh parsley

Instructions:

  1. Season the chicken breasts with salt and pepper, then dredge them in flour.
  2. Heat the olive oil in a skillet over medium-high heat. Add the chicken to the pan and cook until browned on both sides, about 5 minutes per side. Remove the chicken from the pan and set it aside.
  3. In the same pan, add the minced garlic and cook until fragrant, about 1 minute.
  4. Add the chicken broth, lemon juice, and capers to the pan. Bring the mixture to a boil, then reduce the heat to low and simmer for 10 minutes.
  5. Return the chicken to the pan and simmer until the chicken is cooked through, about 10 more minutes.
  6. Sprinkle the chicken with the chopped parsley before serving.
