
Healthy Italian Chicken Piccata

Ingredients:
- 4 Boneless, skinless chicken breasts
- To taste Salt and pepper
- 1/4 cup All-purpose flour
- 2 tablespoons Extra-virgin olive oil
- 2 minced Garlic cloves
- 1 cup Chicken broth
- 1/4 cup Freshly squeezed lemon juice
- 1/4 cup Capers
- 1/4 cup Chopped fresh parsley
Instructions:
- Season the chicken breasts with salt and pepper, then dredge them in flour.
- Heat the olive oil in a skillet over medium-high heat. Add the chicken to the pan and cook until browned on both sides, about 5 minutes per side. Remove the chicken from the pan and set it aside.
- In the same pan, add the minced garlic and cook until fragrant, about 1 minute.
- Add the chicken broth, lemon juice, and capers to the pan. Bring the mixture to a boil, then reduce the heat to low and simmer for 10 minutes.
- Return the chicken to the pan and simmer until the chicken is cooked through, about 10 more minutes.
- Sprinkle the chicken with the chopped parsley before serving.
