
Healthy Italian Breakfast Pasta

Ingredients:
- 200 grams Whole grain spaghetti
- 4 medium Fresh tomatoes
- 2 cups Spinach
- 2 cloves Garlic
- 2 tablespoons Olive oil
- to taste Red pepper flakes
- 1 cup Parmesan cheese
- a handful Fresh basil
- 2 large Eggs
Instructions:
- Boil the spaghetti in a large pot of salted water until al dente. Drain, reserve some pasta water.
- While pasta is boiling, heat olive oil in a pan over medium heat and sauté garlic until fragrant.
- Add chopped tomatoes, spinach, and red pepper flakes. Cook until tomatoes are soft and spinach is wilted.
- Add the cooked spaghetti into the pan. Toss to combine and add reserved pasta water if needed.
- Make two wells in the pasta, crack an egg in each well. Cover and cook until eggs are done to your liking.
- Top with parmesan cheese and fresh basil. Season with salt and pepper. Enjoy your healthy Italian breakfast pasta hot.
