Healthy Italian Breakfast Pasta

Ingredients:

  • 200 grams Whole grain spaghetti
  • 4 medium Fresh tomatoes
  • 2 cups Spinach
  • 2 cloves Garlic
  • 2 tablespoons Olive oil
  • to taste Red pepper flakes
  • 1 cup Parmesan cheese
  • a handful Fresh basil
  • 2 large Eggs

Instructions:

  1. Boil the spaghetti in a large pot of salted water until al dente. Drain, reserve some pasta water.
  2. While pasta is boiling, heat olive oil in a pan over medium heat and sauté garlic until fragrant.
  3. Add chopped tomatoes, spinach, and red pepper flakes. Cook until tomatoes are soft and spinach is wilted.
  4. Add the cooked spaghetti into the pan. Toss to combine and add reserved pasta water if needed.
  5. Make two wells in the pasta, crack an egg in each well. Cover and cook until eggs are done to your liking.
  6. Top with parmesan cheese and fresh basil. Season with salt and pepper. Enjoy your healthy Italian breakfast pasta hot.
