Healthy Italian Beef Stir Fry

Ingredients:

  • 500 grams Lean beef strips
  • 1 tablespoon Olive oil
  • 2 pieces Garlic cloves
  • 1 piece Red bell pepper
  • 2 pieces Zucchini
  • 1 teaspoon Italian seasoning
  • to taste Salt and pepper
  • 1 cup Cherry tomatoes
  • handful Fresh basil

Instructions:

  1. Slice the beef into thin strips, about 1 inch long.
  2. Heat the olive oil in a large skillet over medium heat. Add the beef and cook for 5-7 minutes, or until browned.
  3. While the beef is cooking, chop the garlic, bell pepper, and zucchini.
  4. Add the garlic, bell pepper, and zucchini to the skillet with the beef. Mix in the Italian seasoning, salt, and pepper. Cook for another 5-7 minutes, or until the vegetables are tender.
  5. Just before serving, stir in the cherry tomatoes and fresh basil. Let them heat through for a minute, then serve.
