Healthy Indian Spiced Pork Tenderloin

Ingredients:

  • 1 lb pork tenderloin
  • 1 tsp ground turmeric
  • 1 tsp ground cumin
  • 1/2 tsp ground coriander
  • 1/2 tsp ground ginger
  • 1 tbsp lemon juice
  • 2 tbsp olive oil
  • 2 garlic cloves
  • 1/4 cup chopped fresh cilantro

Instructions:

  1. Preheat the oven to 400 degrees Fahrenheit.
  2. Combine the turmeric, cumin, coriander and ginger in a small bowl.
  3. Rub this spice mixture all over the pork tenderloin.
  4. Heat the olive oil in a large skillet over medium-high heat.
  5. Add the pork to the skillet and brown on all sides.
  6. Place the pork in a baking dish and roast in the oven for 10-15 minutes, until the internal temperature reaches 145 degrees F.
  7. While the pork is cooking, mince the garlic and combine with the lemon juice and chopped cilantro.
  8. Once the pork is done, let it rest for a few minutes before slicing.
  9. Serve the pork slices topped with the garlic-cilantro mixture. Enjoy this healthy Indian-inspired pork dish, perfect for a hearty snack.
