
Healthy Indian Spiced Pork Tenderloin

Ingredients:
- 1 lb pork tenderloin
- 1 tsp ground turmeric
- 1 tsp ground cumin
- 1/2 tsp ground coriander
- 1/2 tsp ground ginger
- 1 tbsp lemon juice
- 2 tbsp olive oil
- 2 garlic cloves
- 1/4 cup chopped fresh cilantro
Instructions:
- Preheat the oven to 400 degrees Fahrenheit.
- Combine the turmeric, cumin, coriander and ginger in a small bowl.
- Rub this spice mixture all over the pork tenderloin.
- Heat the olive oil in a large skillet over medium-high heat.
- Add the pork to the skillet and brown on all sides.
- Place the pork in a baking dish and roast in the oven for 10-15 minutes, until the internal temperature reaches 145 degrees F.
- While the pork is cooking, mince the garlic and combine with the lemon juice and chopped cilantro.
- Once the pork is done, let it rest for a few minutes before slicing.
