Healthy Indian Spiced Pork Roast

Ingredients:

  • 1 kilogram Pork tenderloin
  • 4 cloves Garlic cloves, minced
  • 1 teaspoon Ground turmeric
  • 1 teaspoon Ground cumin
  • 1 teaspoon Ground coriander
  • 0.5 teaspoon Cayenne pepper
  • to taste Salt
  • to taste Black pepper
  • 2 tablespoons Olive oil
  • 1 lemon Lemon, juiced

Instructions:

  1. 1. Preheat the oven to 375 degrees F (190 degrees C).
  2. 2. In a small bowl, combine the minced garlic, ground turmeric, ground cumin, ground coriander, cayenne pepper, salt, and black pepper.
  3. 3. Rub the pork tenderloin with this spice mixture, ensuring it's evenly coated.
  4. 4. Heat the olive oil in a large skillet or ovenproof pan over medium-high heat. Add the pork and sear on all sides until browned.
  5. 5. Transfer the pan to the oven and roast the pork for about 20-25 minutes, or until a meat thermometer reads 145 degrees F.
  6. 6. Remove the pork from the oven and let it rest for a few minutes before slicing.
  7. 7. Drizzle with fresh lemon juice before serving for an extra flavor boost.
