
Healthy Indian Spiced Pork Roast

Ingredients:
- 1 kilogram Pork tenderloin
- 4 cloves Garlic cloves, minced
- 1 teaspoon Ground turmeric
- 1 teaspoon Ground cumin
- 1 teaspoon Ground coriander
- 0.5 teaspoon Cayenne pepper
- to taste Salt
- to taste Black pepper
- 2 tablespoons Olive oil
- 1 lemon Lemon, juiced
Instructions:
- 1. Preheat the oven to 375 degrees F (190 degrees C).
- 2. In a small bowl, combine the minced garlic, ground turmeric, ground cumin, ground coriander, cayenne pepper, salt, and black pepper.
- 3. Rub the pork tenderloin with this spice mixture, ensuring it's evenly coated.
- 4. Heat the olive oil in a large skillet or ovenproof pan over medium-high heat. Add the pork and sear on all sides until browned.
- 5. Transfer the pan to the oven and roast the pork for about 20-25 minutes, or until a meat thermometer reads 145 degrees F.
- 6. Remove the pork from the oven and let it rest for a few minutes before slicing.
- 7. Drizzle with fresh lemon juice before serving for an extra flavor boost.
