Healthy Indian Rice Pilaf

Ingredients:

  • 1.5 cups Basmati Rice
  • 2 tablespoons Olive Oil
  • 1 medium, finely chopped Onion
  • 2 cloves, minced Garlic
  • 1 teaspoon Turmeric Powder
  • 1 teaspoon Cumin Seeds
  • 1 cup, frozen Green Peas
  • 2 medium, finely chopped Carrots
  • 3 cups Water
  • to taste Fresh Coriander Leaves
  • to taste Salt
  • 1 juiced Lemon

Instructions:

  1. Rinse the basmati rice under cold water until the water runs clear. Set aside to drain.
  2. Heat the olive oil in a large pan over medium heat. Add the cumin seeds and fry for a minute until fragrant.
  3. Add the chopped onion to the pan and cook until translucent, about 5-7 minutes. Then, add the minced garlic and cook for another minute.
  4. Add the turmeric powder to the pan and stir well, making sure the onions are coated with the spice.
  5. Add the chopped carrots, frozen peas, and rice to the pan. Stir well to combine with the other ingredients.
  6. Pour in the water and add salt to your taste. Bring the mixture to a boil.
  7. Once the mixture is boiling, reduce the heat to low, cover the pan and let it simmer for 20 minutes, or until all the water is absorbed and the rice is tender.
  8. Remove the pan from the heat and let it sit, covered, for another 10 minutes.
  9. Fluff the rice with a fork, then squeeze the fresh lemon juice over top. Scatter the fresh coriander leaves just before serving.
