
Healthy Indian Prawn Curry

Ingredients:
- 500 grams Prawns
- 2 medium size, finely chopped Onions
- 2 medium size, finely chopped Tomatoes
- 2 cloves, minced Garlic
- 1 inch piece, grated Ginger
- 1/2 teaspoon Turmeric powder
- 1 teaspoon Red chilli powder
- 1 teaspoon Garam masala
- to taste Salt
- 2 tablespoons Olive oil
Instructions:
- Heat the olive oil in a large pan over medium heat. Add the onions and sauté until they become translucent.
- Add the garlic and ginger to the pan and continue to sauté for another 2 minutes.
- Continue to cook and stir until the onions turn golden brown, then add the turmeric, chilli powder, and garam masala. Stir well to combine all the spices with the onions.
- Add the chopped tomatoes to the pan and cook until they soften and start to break down.
- Add the prawns to the pan. Cover and cook for about 5 minutes, until the prawns turn pink and are cooked through.
- Remove from heat and taste the curry. Add salt to taste and adjust the spices if necessary.
- Serve the curry hot with brown rice or whole wheat naan for a complete healthy meal.
