Healthy Indian Prawn Curry

Ingredients:

  • 500 grams Prawns
  • 2 medium size, finely chopped Onions
  • 2 medium size, finely chopped Tomatoes
  • 2 cloves, minced Garlic
  • 1 inch piece, grated Ginger
  • 1/2 teaspoon Turmeric powder
  • 1 teaspoon Red chilli powder
  • 1 teaspoon Garam masala
  • to taste Salt
  • 2 tablespoons Olive oil

Instructions:

  1. Heat the olive oil in a large pan over medium heat. Add the onions and sauté until they become translucent.
  2. Add the garlic and ginger to the pan and continue to sauté for another 2 minutes.
  3. Continue to cook and stir until the onions turn golden brown, then add the turmeric, chilli powder, and garam masala. Stir well to combine all the spices with the onions.
  4. Add the chopped tomatoes to the pan and cook until they soften and start to break down.
  5. Add the prawns to the pan. Cover and cook for about 5 minutes, until the prawns turn pink and are cooked through.
  6. Remove from heat and taste the curry. Add salt to taste and adjust the spices if necessary.
  7. Serve the curry hot with brown rice or whole wheat naan for a complete healthy meal.
