Healthy Indian Pork Curry

Ingredients:

  • 500 grams Boneless pork shoulder
  • 1 medium Onion
  • 2 pieces Garlic cloves
  • 1 inch piece Fresh ginger
  • 2 medium Tomatoes
  • 1 pieces Green chili pepper
  • 2 tablespoons Olive oil
  • 1 teaspoon Garam masala
  • 0.5 teaspoon Turmeric
  • 2 teaspoon Ground coriander
  • 1 teaspoon Ground cumin
  • 2 tablespoons Chopped fresh cilantro
  • To taste Salt
  • To taste Black pepper

Instructions:

  1. Cut the pork into 1-inch pieces and season with salt and black pepper.
  2. In a food processor, puree the onion, garlic, ginger, tomatoes, and chili pepper.
  3. Heat the oil over medium heat in a large saucepan, add the pureed mixture and cook, stirring occasionally, until the mixture reduces and starts to brown slightly.
  4. Stir in the garam masala, turmeric, coriander, and cumin and cook for another minute.
  5. Add the pork pieces to the saucepan and stir until they are coated with the spice mixture.
  6. Cover the saucepan, reduce the heat to low, and simmer for 1 hour or until the pork is tender.
  7. Stir in the chopped cilantro right before serving, and add additional salt and black pepper if needed.
