Healthy Indian Pork Curry

Ingredients:
- 500 grams Boneless pork shoulder
- 1 medium Onion
- 2 pieces Garlic cloves
- 1 inch piece Fresh ginger
- 2 medium Tomatoes
- 1 pieces Green chili pepper
- 2 tablespoons Olive oil
- 1 teaspoon Garam masala
- 0.5 teaspoon Turmeric
- 2 teaspoon Ground coriander
- 1 teaspoon Ground cumin
- 2 tablespoons Chopped fresh cilantro
- To taste Salt
- To taste Black pepper
Instructions:
- Cut the pork into 1-inch pieces and season with salt and black pepper.
- In a food processor, puree the onion, garlic, ginger, tomatoes, and chili pepper.
- Heat the oil over medium heat in a large saucepan, add the pureed mixture and cook, stirring occasionally, until the mixture reduces and starts to brown slightly.
- Stir in the garam masala, turmeric, coriander, and cumin and cook for another minute.
- Add the pork pieces to the saucepan and stir until they are coated with the spice mixture.
- Cover the saucepan, reduce the heat to low, and simmer for 1 hour or until the pork is tender.
- Stir in the chopped cilantro right before serving, and add additional salt and black pepper if needed.
