
Healthy Indian Midnight Rice Pulao

Ingredients:
- 1 cup Basmati Rice
- 2 cups Water
- 2 tablespoons Olive Oil
- 1 medium Onion
- 2 Garlic Cloves
- 1 large Bell Peppers
- 2 large Carrots
- 0.5 cup Green Peas
- 1 teaspoon Cumin Seeds
- 0.5 teaspoon Turmeric Powder
- 1 teaspoon Garam Masala
- as per taste Salt
- 1 tablespoon Freshly Squeezed Lemon Juice
Instructions:
- Wash and soak the Basmati rice for 15 minutes. Then drain the water and keep it aside.
- In a large pan, heat the olive oil over medium heat.
- Add the cumin seeds and sauté for about 30 seconds until they start to splutter.
- Add the chopped onion and minced garlic to the pan, and sauté until the onions become soft and golden.
- Next, add chopped bell peppers, carrots, and peas to the pan. Cook for about 5 minutes until the vegetables are just softened, stirring occasionally.
- Add the turmeric powder, garam masala, salt, and the soaked & drained rice to the pan. Stir well to combine all ingredients.
- Add the water and bring the mixture to a boil.
- Once the water starts boiling, reduce the heat and cover the pan. Let it simmer for about 15-20 minutes or until the rice is cooked and all the water has been absorbed.
- Remove the pan from the heat and let it sit, covered, for about 5 minutes.
- Fluff the rice gently with a fork, drizzle the freshly squeezed lemon juice over the top, and give it a gentle mix. Your Healthy Indian Midnight Rice Pulao is now ready to be served!
