Healthy Indian Midnight Rice Pulao

Ingredients:

  • 1 cup Basmati Rice
  • 2 cups Water
  • 2 tablespoons Olive Oil
  • 1 medium Onion
  • 2 Garlic Cloves
  • 1 large Bell Peppers
  • 2 large Carrots
  • 0.5 cup Green Peas
  • 1 teaspoon Cumin Seeds
  • 0.5 teaspoon Turmeric Powder
  • 1 teaspoon Garam Masala
  • as per taste Salt
  • 1 tablespoon Freshly Squeezed Lemon Juice

Instructions:

  1. Wash and soak the Basmati rice for 15 minutes. Then drain the water and keep it aside.
  2. In a large pan, heat the olive oil over medium heat.
  3. Add the cumin seeds and sauté for about 30 seconds until they start to splutter.
  4. Add the chopped onion and minced garlic to the pan, and sauté until the onions become soft and golden.
  5. Next, add chopped bell peppers, carrots, and peas to the pan. Cook for about 5 minutes until the vegetables are just softened, stirring occasionally.
  6. Add the turmeric powder, garam masala, salt, and the soaked & drained rice to the pan. Stir well to combine all ingredients.
  7. Add the water and bring the mixture to a boil.
  8. Once the water starts boiling, reduce the heat and cover the pan. Let it simmer for about 15-20 minutes or until the rice is cooked and all the water has been absorbed.
  9. Remove the pan from the heat and let it sit, covered, for about 5 minutes.
  10. Fluff the rice gently with a fork, drizzle the freshly squeezed lemon juice over the top, and give it a gentle mix. Your Healthy Indian Midnight Rice Pulao is now ready to be served!
