Healthy Indian Fish Curry

Ingredients:

  • 4 pieces White Fish Fillet
  • 1 large Onion
  • 4 pieces Garlic Cloves
  • 2 inches piece Ginger
  • 1 teaspoon Turmeric Powder
  • 2 teaspoons Ground Coriander
  • 1 teaspoon Ground Cumin
  • 1 teaspoon Chili Powder
  • 4 medium Tomatoes
  • 400 grams Coconut Milk
  • a handful Coriander Leaves
  • 1 piece Lemon
  • to taste Salt
  • to taste Pepper

Instructions:

  1. Dice the onion, and mince the garlic and ginger.
  2. Mix the turmeric, coriander, cumin and chili powder in a bowl.
  3. Heat oil in a large saucepan over medium heat. Add the diced onion, garlic, ginger, and spice mix. Cook until fragrant.
  4. Add chopped tomatoes to the pan and cook until soft.
  5. Add the coconut milk, bring to a boil, then reduce heat and let simmer for approximately 10 minutes.
  6. Add the fish fillets to the pan, cover, and cook for 10 to 15 minutes, or until the fish is cooked through.
  7. Season with salt and pepper. Squeeze in the juice of the lemon and sprinkle with the chopped coriander leaves before serving.
