
Healthy Indian Fish Curry

Ingredients:
- 4 pieces White Fish Fillet
- 1 large Onion
- 4 pieces Garlic Cloves
- 2 inches piece Ginger
- 1 teaspoon Turmeric Powder
- 2 teaspoons Ground Coriander
- 1 teaspoon Ground Cumin
- 1 teaspoon Chili Powder
- 4 medium Tomatoes
- 400 grams Coconut Milk
- a handful Coriander Leaves
- 1 piece Lemon
- to taste Salt
- to taste Pepper
Instructions:
- Dice the onion, and mince the garlic and ginger.
- Mix the turmeric, coriander, cumin and chili powder in a bowl.
- Heat oil in a large saucepan over medium heat. Add the diced onion, garlic, ginger, and spice mix. Cook until fragrant.
- Add chopped tomatoes to the pan and cook until soft.
- Add the coconut milk, bring to a boil, then reduce heat and let simmer for approximately 10 minutes.
- Add the fish fillets to the pan, cover, and cook for 10 to 15 minutes, or until the fish is cooked through.
- Season with salt and pepper. Squeeze in the juice of the lemon and sprinkle with the chopped coriander leaves before serving.
