Healthy Indian Egg Curry

Ingredients:

  • 4 whole Eggs
  • 1 large Onion
  • 2 medium Tomatoes
  • 2 Garlic cloves
  • 1 inch piece Fresh ginger
  • 2 tbsp Olive oil
  • 1 tsp Turmeric powder
  • 1 tsp Red chilli powder
  • 0.5 tsp Garam masala
  • Handful Coriander leaves
  • to taste Salt

Instructions:

  1. In a large pan, heat the olive oil over medium heat.
  2. Add the finely chopped onions, crushed garlic and grated ginger to the pan and sauté until the onions are translucent.
  3. Chop the tomatoes and add them to the pan. Cook until the tomatoes are soft.
  4. Stir in the turmeric powder, red chilli powder, and garam masala. Let the spices cook for a couple of minutes.
  5. Add the eggs and stir to coat them in the spice mixture. Cover the pan and let the eggs cook for about 10 minutes, or until they are fully cooked.
  6. Season with salt to taste, then garnish with the chopped coriander leaves. Serve hot with brown rice or whole grain roti for a healthy and delicious Indian dinner.
