
Healthy Indian Egg Curry

Ingredients:
- 4 whole Eggs
- 1 large Onion
- 2 medium Tomatoes
- 2 Garlic cloves
- 1 inch piece Fresh ginger
- 2 tbsp Olive oil
- 1 tsp Turmeric powder
- 1 tsp Red chilli powder
- 0.5 tsp Garam masala
- Handful Coriander leaves
- to taste Salt
Instructions:
- In a large pan, heat the olive oil over medium heat.
- Add the finely chopped onions, crushed garlic and grated ginger to the pan and sauté until the onions are translucent.
- Chop the tomatoes and add them to the pan. Cook until the tomatoes are soft.
- Stir in the turmeric powder, red chilli powder, and garam masala. Let the spices cook for a couple of minutes.
- Add the eggs and stir to coat them in the spice mixture. Cover the pan and let the eggs cook for about 10 minutes, or until they are fully cooked.
- Season with salt to taste, then garnish with the chopped coriander leaves. Serve hot with brown rice or whole grain roti for a healthy and delicious Indian dinner.
