
Healthy Indian Egg Bhurji

Ingredients:
- 4 unit Eggs
- 2 medium size Onions
- 1 large Tomato
- 1 unit Green chilli
- 2 cloves Garlic
- 1/2 teaspoon Turmeric powder
- 1/2 teaspoon Cumin seeds
- 1 tablespoon Olive oil
- handful chopped Coriander leaves
- to taste unit Salt
Instructions:
- Crack open the eggs in a bowl and whisk them until the yolks and whites are fully combined. Set aside.
- Heat oil in a large non-stick pan over medium heat. Add in the cumin seeds and let them sizzle.
- Add in the chopped onions, garlic and green chilli, and sauté until the onions are translucent and fragrant.
- Add the tomatoes and cook until they are soft. Sprinkle in the turmeric powder, stir well and cook for another minute.
- Reduce the heat to low and pour in the whisked eggs. Cook, stirring continuously, until the eggs are cooked but still moist.
- Season with salt, garnish with chopped coriander leaves, and serve hot.
