Healthy Indian Egg Bhurji

Ingredients:

  • 4 unit Eggs
  • 2 medium size Onions
  • 1 large Tomato
  • 1 unit Green chilli
  • 2 cloves Garlic
  • 1/2 teaspoon Turmeric powder
  • 1/2 teaspoon Cumin seeds
  • 1 tablespoon Olive oil
  • handful chopped Coriander leaves
  • to taste unit Salt

Instructions:

  1. Crack open the eggs in a bowl and whisk them until the yolks and whites are fully combined. Set aside.
  2. Heat oil in a large non-stick pan over medium heat. Add in the cumin seeds and let them sizzle.
  3. Add in the chopped onions, garlic and green chilli, and sauté until the onions are translucent and fragrant.
  4. Add the tomatoes and cook until they are soft. Sprinkle in the turmeric powder, stir well and cook for another minute.
  5. Reduce the heat to low and pour in the whisked eggs. Cook, stirring continuously, until the eggs are cooked but still moist.
  6. Season with salt, garnish with chopped coriander leaves, and serve hot.
