
Healthy Indian Chicken Curry

Ingredients:
- 500 grams Chicken breast
- 2 tablespoons Olive oil
- 2 medium-size Onions, finely chopped
- 3 cloves Garlic cloves, minced
- 1 tablespoon Fresh ginger, grated
- 1 teaspoon Turmeric
- 1 teaspoon Cumin
- 1 teaspoon Coriander
- 1 teaspoon Chili powder
- 4 medium-size Fresh tomatoes, diced
- 200 grams Low-fat yogurt
- A bunch Fresh coriander leaves
- To taste Salt
- To taste Pepper
Instructions:
- Heat the olive oil in a large pan over medium heat.
- Add the onions and sauté until soft and translucent. This should take about 5 minutes.
- Add in the minced garlic, grated ginger, turmeric, cumin, coriander, and chili powder. Stir well to combine and cook for another 2 minutes.
- Add in the chicken breast pieces and cook until they are browned all over. This should take about 5-7 minutes.
- Add in the diced tomatoes and stir well. Cover the pan and let it simmer for about 15 minutes, or until the tomatoes are soft and the chicken is cooked through.
- Stir in the low-fat yogurt and season with salt and pepper. Let the curry simmer for another 2-3 minutes.
- Serve hot, garnished with fresh coriander leaves. This Healthy Indian Chicken Curry is best served with brown rice or whole wheat chapatis.
