Healthy Indian Brown Rice Pulao

Ingredients:

  • 1 cup Brown Basmati Rice
  • 2 tbsp Olive Oil
  • 1 medium Onion, finely chopped
  • 3 Garlic Cloves, minced
  • 1 tbsp Fresh Ginger, grated
  • 2 cups Mixed Vegetables (carrots, green beans, peas)
  • 1 tsp Cumin seeds
  • 1 tsp Turmeric powder
  • 1 tsp Garam masala
  • 1 tsp Sea salt
  • 2 cups Water

Instructions:

  1. Rinse the brown rice under cold water until the water runs clear. Soak it in a bowl of water for 15 minutes.
  2. In a large pan, heat up the olive oil over medium-high heat. Add the cumin seeds and let them splutter.
  3. Add the finely chopped onions and sauté until they become translucent.
  4. Add the minced garlic and grated ginger and cook for another minute.
  5. Add the mixed vegetables, soaked and drained rice, turmeric powder, garam masala, and sea salt. Stir gently to coat the rice and vegetables with the spices.
  6. Add water to the pan and bring the mixture to a boil. Lower the heat, cover the pan, and let it simmer for around 25-30 minutes, or until the rice is cooked and water is absorbed.
  7. Remove the pan from the heat and let it rest for 5 minutes before fluffing up the rice with a fork.
  8. Serve the Healthy Indian Brown Rice Pulao hot, garnished with fresh cilantro if desired.
