
Healthy Indian Brown Rice Pulao

Ingredients:
- 1 cup Brown Basmati Rice
- 2 tbsp Olive Oil
- 1 medium Onion, finely chopped
- 3 Garlic Cloves, minced
- 1 tbsp Fresh Ginger, grated
- 2 cups Mixed Vegetables (carrots, green beans, peas)
- 1 tsp Cumin seeds
- 1 tsp Turmeric powder
- 1 tsp Garam masala
- 1 tsp Sea salt
- 2 cups Water
Instructions:
- Rinse the brown rice under cold water until the water runs clear. Soak it in a bowl of water for 15 minutes.
- In a large pan, heat up the olive oil over medium-high heat. Add the cumin seeds and let them splutter.
- Add the finely chopped onions and sauté until they become translucent.
- Add the minced garlic and grated ginger and cook for another minute.
- Add the mixed vegetables, soaked and drained rice, turmeric powder, garam masala, and sea salt. Stir gently to coat the rice and vegetables with the spices.
- Add water to the pan and bring the mixture to a boil. Lower the heat, cover the pan, and let it simmer for around 25-30 minutes, or until the rice is cooked and water is absorbed.
- Remove the pan from the heat and let it rest for 5 minutes before fluffing up the rice with a fork.
- Serve the Healthy Indian Brown Rice Pulao hot, garnished with fresh cilantro if desired.
