Healthy Indian Breakfast Pasta

Ingredients:

  • 200 grams Whole wheat pasta
  • 1 large Onion
  • 2 medium Bell peppers
  • 2 medium Finely chopped tomatoes
  • 2 cloves Minced garlic
  • 1 teaspoon Grated ginger
  • 1 teaspoon Turmeric powder
  • 0.5 teaspoon Chili powder
  • 1 teaspoon Garam masala
  • to taste Salt
  • 2 tablespoons Olive oil
  • a handful Fresh coriander leaves

Instructions:

  1. Boil the pasta according to the instructions on the packet and set aside.
  2. Heat the olive oil in a large pan or wok.
  3. Add the minced garlic and grated ginger to the pan and sauté for a minute until it releases its aroma.
  4. Add the chopped onion and sauté till it turns translucent.
  5. Add the chopped bell peppers and sauté for a few more minutes until they're slightly softened.
  6. Add the chopped tomatoes and cook until they're well mashed into the mixture.
  7. Add the turmeric powder, chili powder, garam masala and salt. Mix well and cook for a couple of minutes until the flavors are well combined.
  8. Add the cooked pasta and toss everything together until the pasta is well coated with the spices and the mixture is hot.
  9. Garnish with fresh coriander leaves before serving.
