Healthy Indian Beef Curry

Ingredients:
- 1 pound Beef
- 1 large Onion
- 4 cloves Garlic
- 1 inch Ginger
- 1 teaspoon Turmeric powder
- 1 teaspoon Cumin powder
- 1 teaspoon Coriander powder
- 2 Tomatoes
- 2 cups Beef broth
- 3 cups Spinach leaves
- to taste Salt
- to taste Pepper
- a handful for garnish Coriander leaves
Instructions:
- Heat up a pan and add the beef. Cook until browned, then set aside.
- In the same pan, sauté the onions until translucent.
- Add the minced garlic and ginger to the pan and sauté for a minute more.
- Add the spices (turmeric, cumin, coriander) and cook until fragrant.
- Add the tomatoes, beef, and beef broth to the pan and bring to a boil. Lower the heat and let simmer for about 1 hour until the beef is tender.
- Add the spinach and cook until it's wilted.
- Season with salt and pepper.
- Garnish with coriander leaves before serving.
