Healthy Indian Beef Curry

Ingredients:

  • 1 pound Beef
  • 1 large Onion
  • 4 cloves Garlic
  • 1 inch Ginger
  • 1 teaspoon Turmeric powder
  • 1 teaspoon Cumin powder
  • 1 teaspoon Coriander powder
  • 2 Tomatoes
  • 2 cups Beef broth
  • 3 cups Spinach leaves
  • to taste Salt
  • to taste Pepper
  • a handful for garnish Coriander leaves

Instructions:

  1. Heat up a pan and add the beef. Cook until browned, then set aside.
  2. In the same pan, sauté the onions until translucent.
  3. Add the minced garlic and ginger to the pan and sauté for a minute more.
  4. Add the spices (turmeric, cumin, coriander) and cook until fragrant.
  5. Add the tomatoes, beef, and beef broth to the pan and bring to a boil. Lower the heat and let simmer for about 1 hour until the beef is tender.
  6. Add the spinach and cook until it's wilted.
  7. Season with salt and pepper.
  8. Garnish with coriander leaves before serving.
