
Healthy Fruit Stir-Fry

Ingredients:
- 2 cups assorted fruits
- 1 cup bell peppers, cut into thin strips
- 1/2 onions, thinly sliced
- 1 teaspoon ginger, minced
- 2 clove garlic, minced
- 2 tablespoon soy sauce
- 1/2 cup orange juice
- 1 tablespoon cornstarch
- 1 tablespoon olive oil
Instructions:
- Wash and cut your fruits. We recommend using a combination of pineapple, apple, and oranges for more variation. Place them aside.
- In a small bowl, whisk together the soy sauce, orange juice and cornstarch until no lumps remain. Set aside.
- Heat oil in a wok or large saute pan over medium heat. Add the ginger and garlic, saute until fragrant.
- Add the bell peppers and onions to the pan and stir fry for around 3-5 minutes till they begin to soften.
- Pour the sauce over the vegetables and bring to a simmer over medium heat. Allow the sauce to thicken and stir in the fruits.
- Cook for another 3-4 minutes till the fruits are heated through.
- Serve over brown rice or whole grain noodles.
