Healthy Fruit Stir-Fry

Ingredients:

  • 2 cups assorted fruits
  • 1 cup bell peppers, cut into thin strips
  • 1/2 onions, thinly sliced
  • 1 teaspoon ginger, minced
  • 2 clove garlic, minced
  • 2 tablespoon soy sauce
  • 1/2 cup orange juice
  • 1 tablespoon cornstarch
  • 1 tablespoon olive oil

Instructions:

  1. Wash and cut your fruits. We recommend using a combination of pineapple, apple, and oranges for more variation. Place them aside.
  2. In a small bowl, whisk together the soy sauce, orange juice and cornstarch until no lumps remain. Set aside.
  3. Heat oil in a wok or large saute pan over medium heat. Add the ginger and garlic, saute until fragrant.
  4. Add the bell peppers and onions to the pan and stir fry for around 3-5 minutes till they begin to soften.
  5. Pour the sauce over the vegetables and bring to a simmer over medium heat. Allow the sauce to thicken and stir in the fruits.
  6. Cook for another 3-4 minutes till the fruits are heated through.
  7. Serve over brown rice or whole grain noodles.
