Healthy French Style Roasted Chicken

Ingredients:
- 1 Whole chicken
- 1 Lemon
- 8 Garlic cloves
- 4 sprigs Fresh rosemary
- 4 sprigs Fresh thyme
- 2 tsp Salt
- 1 tsp Black pepper
- 2 tbsp Olive oil
- 4 Carrots
- 2 Red onions
Instructions:
- Preheat your oven to 425°F (220°C).
- Clean and pat dry the chicken.
- Rub the chicken with olive oil, then with salt and pepper.
- Stuff the chicken with half a lemon, 4 cloves of garlic, and 2 sprigs each of rosemary and thyme.
- Peel and roughly chop the carrots and red onions, then spread them on a roasting tray. Place the chicken on top.
- Roast the chicken in the oven for 1 hour and 30 minutes, or until the juices run clear when pierced at the thickest part of the thigh.
- Allow the chicken to rest for 10 minutes before carving. Serve with roasted vegetables.
