Healthy French Style Roasted Chicken

Ingredients:

  • 1 Whole chicken
  • 1 Lemon
  • 8 Garlic cloves
  • 4 sprigs Fresh rosemary
  • 4 sprigs Fresh thyme
  • 2 tsp Salt
  • 1 tsp Black pepper
  • 2 tbsp Olive oil
  • 4 Carrots
  • 2 Red onions

Instructions:

  1. Preheat your oven to 425°F (220°C).
  2. Clean and pat dry the chicken.
  3. Rub the chicken with olive oil, then with salt and pepper.
  4. Stuff the chicken with half a lemon, 4 cloves of garlic, and 2 sprigs each of rosemary and thyme.
  5. Peel and roughly chop the carrots and red onions, then spread them on a roasting tray. Place the chicken on top.
  6. Roast the chicken in the oven for 1 hour and 30 minutes, or until the juices run clear when pierced at the thickest part of the thigh.
  7. Allow the chicken to rest for 10 minutes before carving. Serve with roasted vegetables.
