
Healthy French Seafood Ratatouille

Ingredients:
- 2 tablespoons olive oil
- 3 cloves garlic cloves
- 1 large red onion
- 2 large bell peppers
- 1 large eggplant
- 2 medium zucchini
- 4 large ripe tomatoes
- handful fresh basil leaves
- 500 grams mixed seafood
- to taste salt and pepper
Instructions:
- Heat the olive oil over medium heat in a large, covered skillet or Dutch oven. Add the garlic and onion until they soften, stirring occasionally for about 5 minutes.
- Add peppers, eggplant, and zucchini to the pan, stirring until they're well coated with the oil. Cover the pan and cook for about 10 minutes, stirring occasionally.
- Stir in the tomatoes, cover again, and simmer on low heat for another 15 minutes until all vegetables are cooked.
- In a separate pan, cook the mixed seafood until it's done (this will depend on the type of seafood - it could take between 5 and 10 minutes). Make sure to season it with some salt and pepper.
- Mix the cooked seafood into the vegetable mix, and check the seasoning. Add more salt and pepper if needed, and stir in the basil leaves just before serving.
