Healthy French Seafood Ratatouille

Ingredients:

  • 2 tablespoons olive oil
  • 3 cloves garlic cloves
  • 1 large red onion
  • 2 large bell peppers
  • 1 large eggplant
  • 2 medium zucchini
  • 4 large ripe tomatoes
  • handful fresh basil leaves
  • 500 grams mixed seafood
  • to taste salt and pepper

Instructions:

  1. Heat the olive oil over medium heat in a large, covered skillet or Dutch oven. Add the garlic and onion until they soften, stirring occasionally for about 5 minutes.
  2. Add peppers, eggplant, and zucchini to the pan, stirring until they're well coated with the oil. Cover the pan and cook for about 10 minutes, stirring occasionally.
  3. Stir in the tomatoes, cover again, and simmer on low heat for another 15 minutes until all vegetables are cooked.
  4. In a separate pan, cook the mixed seafood until it's done (this will depend on the type of seafood - it could take between 5 and 10 minutes). Make sure to season it with some salt and pepper.
  5. Mix the cooked seafood into the vegetable mix, and check the seasoning. Add more salt and pepper if needed, and stir in the basil leaves just before serving.
