
Healthy French Seafood Mussels in White Wine

Ingredients:
- 2 pounds Fresh mussels
- 2 Shallots
- 2 Garlic cloves
- 1 cup White wine
- 1 tbsp Olive oil
- 1 handful Fresh parsley
- to taste Salt and pepper
Instructions:
- Clean the mussels under cold running water. Discard any open ones that do not close when tapped.
- Peel and finely chop the shallots and garlic.
- In a large pan, sauté the shallots and garlic in olive oil until they are translucent but not browned.
- Add the mussels to the pan and mix them well with the shallots and garlic.
- Pour in the white wine, cover the pan, and let the mussels steam for about 5 to 10 minutes, until they have opened up.
- While the mussels are steaming, chop the parsley.
- When the mussels are ready, sprinkle them with the chopped parsley and season with salt and pepper. Serve hot.
