Healthy French Seafood Mussels in White Wine

Ingredients:

  • 2 pounds Fresh mussels
  • 2 Shallots
  • 2 Garlic cloves
  • 1 cup White wine
  • 1 tbsp Olive oil
  • 1 handful Fresh parsley
  • to taste Salt and pepper

Instructions:

  1. Clean the mussels under cold running water. Discard any open ones that do not close when tapped.
  2. Peel and finely chop the shallots and garlic.
  3. In a large pan, sauté the shallots and garlic in olive oil until they are translucent but not browned.
  4. Add the mussels to the pan and mix them well with the shallots and garlic.
  5. Pour in the white wine, cover the pan, and let the mussels steam for about 5 to 10 minutes, until they have opened up.
  6. While the mussels are steaming, chop the parsley.
  7. When the mussels are ready, sprinkle them with the chopped parsley and season with salt and pepper. Serve hot.
