Healthy French Seafood Bouillabaisse

Ingredients:
- 2 tablespoons olive oil
- 1 cup onions, chopped
- 3 garlic cloves, minced
- 2 cups ripe tomatoes, chopped
- 1 fennel bulb, sliced
- 1 teaspoon dried thyme
- 1 bay leaf
- 1 orange, zest of
- 1 cup white wine
- 4 cups fish stock
- pinch saffron threads
- 3 pounds mixed seafood (prawns, mussels, white fish)
- to taste salt
- to taste freshly ground black pepper
Instructions:
- Heat the olive oil in a large pot over medium heat. Add the onions, garlic and fennel and cook until softened.
- Add the tomatoes, thyme, bay leaf, orange zest, wine, fish stock and saffron. Bring to a boil, then reduce heat and simmer for 30 minutes.
- Add the mixed seafood to the pot. Cover and cook for 10-15 minutes, or until the seafood is cooked through.
- Season with salt and pepper. Ladle the bouillabaisse into bowls and serve with crusty bread.
