Healthy French Seafood Bouillabaisse

Ingredients:

  • 2 tablespoons olive oil
  • 1 cup onions, chopped
  • 3 garlic cloves, minced
  • 2 cups ripe tomatoes, chopped
  • 1 fennel bulb, sliced
  • 1 teaspoon dried thyme
  • 1 bay leaf
  • 1 orange, zest of
  • 1 cup white wine
  • 4 cups fish stock
  • pinch saffron threads
  • 3 pounds mixed seafood (prawns, mussels, white fish)
  • to taste salt
  • to taste freshly ground black pepper

Instructions:

  1. Heat the olive oil in a large pot over medium heat. Add the onions, garlic and fennel and cook until softened.
  2. Add the tomatoes, thyme, bay leaf, orange zest, wine, fish stock and saffron. Bring to a boil, then reduce heat and simmer for 30 minutes.
  3. Add the mixed seafood to the pot. Cover and cook for 10-15 minutes, or until the seafood is cooked through.
  4. Season with salt and pepper. Ladle the bouillabaisse into bowls and serve with crusty bread.
