Healthy French Ratatouille Pasta

Ingredients:

  • 500 grams Whole wheat pasta
  • 2 tablespoons Olive oil
  • 1 large Onion
  • 2 units Garlic cloves
  • 1 medium Eggplant
  • 2 units Red bell peppers
  • 2 medium Zucchini
  • 4 medium Tomatoes
  • 1 teaspoon Thyme
  • 1 bunch Fresh basil leaves
  • Salt and pepper to taste

Instructions:

  1. Boil the pasta in a large pot of salted water until al dente. Reserve 1 cup of pasta water for later, then drain the pasta.
  2. In a large pan over medium heat, warm the olive oil. Sauté the onions and garlic until fragrant.
  3. Add eggplant, bell peppers, zucchini, and tomatoes to the pan. Stir well and continue to cook over medium heat till the vegetables are tender and cooked.
  4. Add in the thyme and reserve pasta water to the vegetable mix. Let it simmer for 5-10 minutes for the flavors to meld together and the sauce to thicken.
  5. Add the cooked pasta to the pan and toss it well with the vegetable mix. Allow it to heat through, stirring gently.
  6. Season with salt, generous amounts of fresh ground black pepper and add in the fresh basil. Serve hot and enjoy your light yet satisfying French Ratatouille Pasta!
