
Healthy French Pork Tenderloin

Ingredients:
- 1 piece Pork tenderloin
- 2 tablespoons Olive oil
- 2 pieces Garlic cloves
- 2 tablespoons Lemon juice
- 1 tablespoons Dijon mustard
- 1 teaspoon Herbes de Provence
- 0.5 teaspoon Salt
- 0.25 teaspoon Black pepper
Instructions:
- Preheat the oven to 400°F (200°C).
- Brush pork tenderloin with 1 tablespoon of olive oil.
- In a small bowl, mix together the garlic, lemon juice, Dijon mustard, herbes de Provence, salt, and pepper.
- Rub this mixture all over the pork tenderloin.
- Heat the remaining tablespoon of oil in an oven-safe skillet over medium-high heat.
- Add the pork and sear on all sides until browned, about 2-3 minutes per side.
- Transfer the skillet to the preheated oven and roast for about 15-20 minutes, or until the pork reaches an internal temperature of 145°F (63°C).
- Remove from the oven and let rest for a few minutes before slicing and serving.
