Healthy French Pork Tenderloin

Ingredients:

  • 1 piece Pork tenderloin
  • 2 tablespoons Olive oil
  • 2 pieces Garlic cloves
  • 2 tablespoons Lemon juice
  • 1 tablespoons Dijon mustard
  • 1 teaspoon Herbes de Provence
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper

Instructions:

  1. Preheat the oven to 400°F (200°C).
  2. Brush pork tenderloin with 1 tablespoon of olive oil.
  3. In a small bowl, mix together the garlic, lemon juice, Dijon mustard, herbes de Provence, salt, and pepper.
  4. Rub this mixture all over the pork tenderloin.
  5. Heat the remaining tablespoon of oil in an oven-safe skillet over medium-high heat.
  6. Add the pork and sear on all sides until browned, about 2-3 minutes per side.
  7. Transfer the skillet to the preheated oven and roast for about 15-20 minutes, or until the pork reaches an internal temperature of 145°F (63°C).
  8. Remove from the oven and let rest for a few minutes before slicing and serving.
