Healthy French Onion Chicken

Ingredients:

  • 2 pieces Boneless skinless chicken breasts
  • 2 medium size Yellow onions
  • 2 tablespoons Olive oil
  • 2 sprigs Fresh thyme
  • 1 tablespoon Worcestershire sauce
  • 2 cloves Garlic
  • 1 cup Low sodium chicken broth
  • 4 slices Low fat swiss cheese
  • To taste Salt and Pepper

Instructions:

  1. Preheat your oven to 400°F (200°C).
  2. Heat the olive oil in a large, oven-safe skillet over medium-high heat. Add the chicken breasts and sear them on both sides until golden brown. Remove the chicken to a plate and set aside.
  3. In the same skillet, add the sliced onions and cook for 5 minutes, or until they become translucent and slightly caramelized. Add the garlic and thyme and cook for another minute.
  4. Add the Worcestershire sauce and chicken broth to the skillet, and stir well, scraping up any browned bits stuck to the bottom of the skillet.
  5. Return the chicken to the skillet, nestling it into the onions. Cover the skillet with a lid or aluminum foil and bake in the preheated oven for 15 to 20 minutes, or until the chicken is cooked through.
  6. Remove the skillet from the oven, and top each chicken breast with a slice of cheese. Return the skillet to the oven for another few minutes, or until the cheese is melted and bubbly.
  7. Season with salt and pepper to taste, and serve hot.
