
Healthy French Onion Chicken

Ingredients:
- 2 pieces Boneless skinless chicken breasts
- 2 medium size Yellow onions
- 2 tablespoons Olive oil
- 2 sprigs Fresh thyme
- 1 tablespoon Worcestershire sauce
- 2 cloves Garlic
- 1 cup Low sodium chicken broth
- 4 slices Low fat swiss cheese
- To taste Salt and Pepper
Instructions:
- Preheat your oven to 400°F (200°C).
- Heat the olive oil in a large, oven-safe skillet over medium-high heat. Add the chicken breasts and sear them on both sides until golden brown. Remove the chicken to a plate and set aside.
- In the same skillet, add the sliced onions and cook for 5 minutes, or until they become translucent and slightly caramelized. Add the garlic and thyme and cook for another minute.
- Add the Worcestershire sauce and chicken broth to the skillet, and stir well, scraping up any browned bits stuck to the bottom of the skillet.
- Return the chicken to the skillet, nestling it into the onions. Cover the skillet with a lid or aluminum foil and bake in the preheated oven for 15 to 20 minutes, or until the chicken is cooked through.
- Remove the skillet from the oven, and top each chicken breast with a slice of cheese. Return the skillet to the oven for another few minutes, or until the cheese is melted and bubbly.
- Season with salt and pepper to taste, and serve hot.
