
Healthy French Omelette

Ingredients:
- 4 units Eggs
- 1 tablespoon Olive oil
- 0.5 cup Green bell pepper
- 0.25 cup Onion
- 1 unit Garlic clove
- 0.5 cup Cherry tomatoes
- 1 cup Fresh spinach
- 1 pinch Red pepper flakes
- to taste Salt
- to taste Black pepper
Instructions:
- Heat the olive oil in a non-stick skillet over medium heat.
- Add green bell pepper and onion to the skillet and sauté until they begin to soften.
- Add garlic to the skillet and continue to sauté for another minute.
- In a bowl, whisk the eggs and season with salt and black pepper.
- Add the whisked eggs to the skillet and stir gently with a spatula as it starts to set, forming large, soft curds.
- Once half set, scatter over the cherry tomatoes and spinach.
- Continue to cook without stirring, for a further 2-3 minutes or until the omelette is cooked to your liking.
- Sprinkle with red pepper flakes and gently fold the omelette in half.
- Serve immediately, straight from the skillet.
