Healthy French Omelette

Ingredients:

  • 4 units Eggs
  • 1 tablespoon Olive oil
  • 0.5 cup Green bell pepper
  • 0.25 cup Onion
  • 1 unit Garlic clove
  • 0.5 cup Cherry tomatoes
  • 1 cup Fresh spinach
  • 1 pinch Red pepper flakes
  • to taste Salt
  • to taste Black pepper

Instructions:

  1. Heat the olive oil in a non-stick skillet over medium heat.
  2. Add green bell pepper and onion to the skillet and sauté until they begin to soften.
  3. Add garlic to the skillet and continue to sauté for another minute.
  4. In a bowl, whisk the eggs and season with salt and black pepper.
  5. Add the whisked eggs to the skillet and stir gently with a spatula as it starts to set, forming large, soft curds.
  6. Once half set, scatter over the cherry tomatoes and spinach.
  7. Continue to cook without stirring, for a further 2-3 minutes or until the omelette is cooked to your liking.
  8. Sprinkle with red pepper flakes and gently fold the omelette in half.
  9. Serve immediately, straight from the skillet.
