Healthy French Mushroom Rice Casserole

Ingredients:

  • 1 cup White Rice
  • 2 cups Water
  • 1 tablespoon Olive Oil
  • 2 cloves Garlic
  • 1 medium size Onion
  • 1 cup Assorted Mushrooms
  • 1 cup Spinach
  • 1 teaspoon Salt
  • 1 teaspoon Pepper
  • 1 cup Low Fat Cheese

Instructions:

  1. In a large saucepan, bring water to a boil. Stir in the rice. Reduce heat, cover, and cook for 20 minutes.
  2. In a skillet, heat oil over medium heat. Cook onion and garlic in oil until lightly browned.
  3. Stir in mushrooms and spinach, cook until vegetables are lightly browned and water from the mushrooms has mostly evaporated.
  4. Add cooked rice to the pan and mix well. Add salt, pepper, and sprinkle with cheese.
  5. Cover and cook on a low flame for a further 10 minutes or until cheese is melted. If desired, add more cheese on top and bake in the oven at 350F until golden and bubbly.
  6. Serve warm and enjoy!
