
Healthy French Mushroom Rice Casserole

Ingredients:
- 1 cup White Rice
- 2 cups Water
- 1 tablespoon Olive Oil
- 2 cloves Garlic
- 1 medium size Onion
- 1 cup Assorted Mushrooms
- 1 cup Spinach
- 1 teaspoon Salt
- 1 teaspoon Pepper
- 1 cup Low Fat Cheese
Instructions:
- In a large saucepan, bring water to a boil. Stir in the rice. Reduce heat, cover, and cook for 20 minutes.
- In a skillet, heat oil over medium heat. Cook onion and garlic in oil until lightly browned.
- Stir in mushrooms and spinach, cook until vegetables are lightly browned and water from the mushrooms has mostly evaporated.
- Add cooked rice to the pan and mix well. Add salt, pepper, and sprinkle with cheese.
- Cover and cook on a low flame for a further 10 minutes or until cheese is melted. If desired, add more cheese on top and bake in the oven at 350F until golden and bubbly.
- Serve warm and enjoy!
