
Healthy French Fish En Papillote

Ingredients:
- 4 pieces white fish fillets
- 2 tbsp olive oil
- 1 whole lemon
- 2 cloves garlic
- 2 cups assorted vegetables (bell peppers, zucchini, cherry tomatoes)
- to taste fresh herbs (parsley, thyme)
- to taste salt & pepper
Instructions:
- Preheat your oven to 200 degrees Celsius (400 degrees Fahrenheit).
- Prepare the fish fillets by drizzling them with 1 tablespoon of olive oil, the juice of half a lemon, minced garlic, and salt and pepper to taste. Set aside for the marinade to absorb.
- Thinly slice the vegetables and the rest of the lemon.
- Place a fish fillet in the center of a large piece of parchment paper. Arrange the sliced lemon, vegetables, and herbs on top of and around the fish.
- Fold the parchment paper over the fish and veggies, and crimp the edges to seal. Repeat with the remaining fillets.
- Place the packets on a baking sheet and bake for 15 minutes, or until the fish is cooked through and the vegetables are tender.
- Carefully open the packets (watch out for steam), check that the fish is cooked, garnish with additional fresh herbs, and serve immediately.
