Healthy French Fish En Papillote

Ingredients:

  • 4 pieces white fish fillets
  • 2 tbsp olive oil
  • 1 whole lemon
  • 2 cloves garlic
  • 2 cups assorted vegetables (bell peppers, zucchini, cherry tomatoes)
  • to taste fresh herbs (parsley, thyme)
  • to taste salt & pepper

Instructions:

  1. Preheat your oven to 200 degrees Celsius (400 degrees Fahrenheit).
  2. Prepare the fish fillets by drizzling them with 1 tablespoon of olive oil, the juice of half a lemon, minced garlic, and salt and pepper to taste. Set aside for the marinade to absorb.
  3. Thinly slice the vegetables and the rest of the lemon.
  4. Place a fish fillet in the center of a large piece of parchment paper. Arrange the sliced lemon, vegetables, and herbs on top of and around the fish.
  5. Fold the parchment paper over the fish and veggies, and crimp the edges to seal. Repeat with the remaining fillets.
  6. Place the packets on a baking sheet and bake for 15 minutes, or until the fish is cooked through and the vegetables are tender.
  7. Carefully open the packets (watch out for steam), check that the fish is cooked, garnish with additional fresh herbs, and serve immediately.
