Ingredients:
- 4 unit Eggs
- 1 tbsp Extra Virgin Olive Oil
- 2 cloves Garlic
- 2 cups Spinach
- 1 cup Cherry tomatoes
- 1 unit Red bell pepper
- To Taste unit Salt
- To Taste unit Pepper
Instructions:
- Heat the olive oil in a skillet over medium heat.
- Add the garlic and cook until fragrant, about 1 minute.
- Add the red bell pepper, spinach, and cherry tomatoes. Sauté until the vegetables are tender.
- Crack the eggs into the skillet, making sure to spread them evenly over the vegetables.
- Season with salt and pepper.
- Cover the skillet and cook until the eggs are done to your liking.
- Serve hot from the skillet.
