Healthy French Egg Skillet

Ingredients:

  • 4 unit Eggs
  • 1 tbsp Extra Virgin Olive Oil
  • 2 cloves Garlic
  • 2 cups Spinach
  • 1 cup Cherry tomatoes
  • 1 unit Red bell pepper
  • To Taste unit Salt
  • To Taste unit Pepper

Instructions:

  1. Heat the olive oil in a skillet over medium heat.
  2. Add the garlic and cook until fragrant, about 1 minute.
  3. Add the red bell pepper, spinach, and cherry tomatoes. Sauté until the vegetables are tender.
  4. Crack the eggs into the skillet, making sure to spread them evenly over the vegetables.
  5. Season with salt and pepper.
  6. Cover the skillet and cook until the eggs are done to your liking.
  7. Serve hot from the skillet.
