Healthy French Egg Casserole

Ingredients:

  • 8 whole Eggs
  • 2 tablespoons Olive oil
  • 2 cloves Garlic
  • 1 large Onion
  • 2 whole Bell peppers
  • 1 medium Zucchini
  • 2 medium Tomatoes
  • to taste tbsp Fresh herbs (like thyme and parsley)
  • to taste teaspoon Salt
  • to taste teaspoon Black pepper

Instructions:

  1. Preheat oven to 375 degrees Fahrenheit.
  2. Heat olive oil in a large skillet over medium heat.
  3. Add chopped onion, garlic, bell peppers, and zucchini to the skillet and sauté until tender and lightly browned.
  4. Transfer the sautéed vegetables to a greased baking dish.
  5. Beat the eggs in a large bowl and add chopped tomatoes, fresh herbs, salt, and pepper.
  6. Pour the egg mixture over the sautéed vegetables in the baking dish.
  7. Bake in the preheated oven for about 35 minutes, or until the eggs are set.
  8. Let the casserole cool for a few minutes before serving.
  9. This dish can be served warm from the oven or at room temperature.
