
Healthy French Egg Casserole

Ingredients:
- 8 whole Eggs
- 2 tablespoons Olive oil
- 2 cloves Garlic
- 1 large Onion
- 2 whole Bell peppers
- 1 medium Zucchini
- 2 medium Tomatoes
- to taste tbsp Fresh herbs (like thyme and parsley)
- to taste teaspoon Salt
- to taste teaspoon Black pepper
Instructions:
- Preheat oven to 375 degrees Fahrenheit.
- Heat olive oil in a large skillet over medium heat.
- Add chopped onion, garlic, bell peppers, and zucchini to the skillet and sauté until tender and lightly browned.
- Transfer the sautéed vegetables to a greased baking dish.
- Beat the eggs in a large bowl and add chopped tomatoes, fresh herbs, salt, and pepper.
- Pour the egg mixture over the sautéed vegetables in the baking dish.
- Bake in the preheated oven for about 35 minutes, or until the eggs are set.
- Let the casserole cool for a few minutes before serving.
- This dish can be served warm from the oven or at room temperature.
