Healthy French Chicken Salad

Ingredients:

  • 2 pieces Boneless chicken breasts
  • 2 cups Mixed salad greens
  • 0.5 cup Cherry tomatoes
  • 0.5 piece Cucumber
  • 0.25 piece Red onion
  • 0.5 cup French vinaigrette
  • 1 tbsp Mustard
  • 1 tsp Honey
  • 0.5 lemon Lemon juice
  • 2 tbsp Extra virgin olive oil
  • to taste Salt and pepper

Instructions:

  1. Season the chicken breasts with salt, pepper and a tablespoon of lemon juice.
  2. In a pan, heat the olive oil over medium heat. Add the chicken breasts and cook for about 7 minutes on each side or until they are thoroughly cooked.
  3. Remove the chicken from the pan and allow it to rest for a few minutes.
  4. While the chicken is resting, prepare your salad. In a large bowl, combine salad greens, cherry tomatoes, sliced cucumber, and sliced red onion.
  5. Prepare the vinaigrette by mixing mustard, honey, the remaining lemon juice and French vinaigrette.
  6. Slice the chicken into thin strips and add it to the salad.
  7. Pour your vinaigrette over the salad and gently toss to combine.
  8. Season your salad with additional salt and pepper, if desired.
  9. Your Healthy French Chicken Salad is ready to serve!
