
Healthy French Chicken Salad

Ingredients:
- 2 pieces Boneless chicken breasts
- 2 cups Mixed salad greens
- 0.5 cup Cherry tomatoes
- 0.5 piece Cucumber
- 0.25 piece Red onion
- 0.5 cup French vinaigrette
- 1 tbsp Mustard
- 1 tsp Honey
- 0.5 lemon Lemon juice
- 2 tbsp Extra virgin olive oil
- to taste Salt and pepper
Instructions:
- Season the chicken breasts with salt, pepper and a tablespoon of lemon juice.
- In a pan, heat the olive oil over medium heat. Add the chicken breasts and cook for about 7 minutes on each side or until they are thoroughly cooked.
- Remove the chicken from the pan and allow it to rest for a few minutes.
- While the chicken is resting, prepare your salad. In a large bowl, combine salad greens, cherry tomatoes, sliced cucumber, and sliced red onion.
- Prepare the vinaigrette by mixing mustard, honey, the remaining lemon juice and French vinaigrette.
- Slice the chicken into thin strips and add it to the salad.
- Pour your vinaigrette over the salad and gently toss to combine.
- Season your salad with additional salt and pepper, if desired.
- Your Healthy French Chicken Salad is ready to serve!
