
Healthy French Chicken Omelette

Ingredients:
- 1 piece Chicken breast
- 4 pieces Large eggs
- 1/4 cup Skim Milk
- 1/2 cup Low-fat cheese
- 1 cup Spinach
- 2 pieces Tomatoes
- 1 tablespoon Olive oil
- to taste Salt and pepper
Instructions:
- Cube the chicken and sauté in a non-stick pan with the olive oil until cooked through. Set aside.
- In a bowl, whisk together the eggs and skim milk until fluffy. Season with salt and pepper.
- In the same pan, pour in the egg mixture and cook over medium heat until the edges start to set.
- Evenly distribute the chicken, spinach, and diced tomatoes over half of the omelette. Sprinkle over the cheese.
- Using a spatula, carefully fold the omelette over the fillings. Cook for another 1-2 minutes or until the cheese has melted.
- Serve the Healthy French Chicken Omelette immediately while hot. This serves 2 people.
