Healthy French Chicken Omelette

Ingredients:

  • 1 piece Chicken breast
  • 4 pieces Large eggs
  • 1/4 cup Skim Milk
  • 1/2 cup Low-fat cheese
  • 1 cup Spinach
  • 2 pieces Tomatoes
  • 1 tablespoon Olive oil
  • to taste Salt and pepper

Instructions:

  1. Cube the chicken and sauté in a non-stick pan with the olive oil until cooked through. Set aside.
  2. In a bowl, whisk together the eggs and skim milk until fluffy. Season with salt and pepper.
  3. In the same pan, pour in the egg mixture and cook over medium heat until the edges start to set.
  4. Evenly distribute the chicken, spinach, and diced tomatoes over half of the omelette. Sprinkle over the cheese.
  5. Using a spatula, carefully fold the omelette over the fillings. Cook for another 1-2 minutes or until the cheese has melted.
  6. Serve the Healthy French Chicken Omelette immediately while hot. This serves 2 people.
