Healthy French Breakfast Rice Bowl

Ingredients:

  • 1 cup long grain rice
  • 2 cups water
  • 1/2 cup almond milk
  • 2 tablespoons honey or maple syrup
  • 1 cup mixed berries
  • 1/4 cup chopped almonds
  • 1 teaspoon chia seeds
  • 1 pinch pinch of sea salt

Instructions:

  1. In a medium-size pot, add your long grain rice and water. Bring to a boil over high heat.
  2. Reduce heat to low, cover the pot and cook for 15-20 minutes or until the rice is tender.
  3. Stir in the almond milk, sweetener of choice and a pinch of sea salt. Cook on low for an additional 2-3 minutes.
  4. Serve your rice warm in a bowl, topped with your mixed berries, chopped almonds, and chia seeds.
