Healthy French Breakfast Pork Casserole

Ingredients:

  • 4 Lean pork chops
  • 2 Green apples
  • 1 cup Spelt bread crumbs
  • 2 tablespoons Dijon mustard
  • 2 cloves Minced garlic
  • 1 tablespoon Fresh thyme
  • 2 tablespoons Olive oil
  • to taste Sea salt and fresh ground pepper

Instructions:

  1. Preheat the oven to 400 degrees F (200 degrees C).
  2. Heat olive oil in a skillet over medium heat. Season the pork chops with salt and pepper, then sear them in the skillet until golden brown on both sides.
  3. While pork chops are being cooked, peel and slice the green apples.
  4. In a large bowl, mix together spelt breadcrumbs, minced garlic, Dijon mustard and fresh thyme. Add sliced apples and mix everything together.
  5. Arrange the seared pork chops in a baking dish. Spread the apple and breadcrumb mixture over the pork chops.
  6. Cover the baking dish and bake in the preheated oven for about 30 minutes, until the pork is cooked through.
