
Healthy French Breakfast Pork Casserole

Ingredients:
- 4 Lean pork chops
- 2 Green apples
- 1 cup Spelt bread crumbs
- 2 tablespoons Dijon mustard
- 2 cloves Minced garlic
- 1 tablespoon Fresh thyme
- 2 tablespoons Olive oil
- to taste Sea salt and fresh ground pepper
Instructions:
- Preheat the oven to 400 degrees F (200 degrees C).
- Heat olive oil in a skillet over medium heat. Season the pork chops with salt and pepper, then sear them in the skillet until golden brown on both sides.
- While pork chops are being cooked, peel and slice the green apples.
- In a large bowl, mix together spelt breadcrumbs, minced garlic, Dijon mustard and fresh thyme. Add sliced apples and mix everything together.
- Arrange the seared pork chops in a baking dish. Spread the apple and breadcrumb mixture over the pork chops.
- Cover the baking dish and bake in the preheated oven for about 30 minutes, until the pork is cooked through.
