
Healthy French Breakfast Pasta

Ingredients:
- 200 grams Whole grain pasta
- 2 tablespoons Olive Oil
- 3 cloves Garlic
- 2 cups Spinach
- 1 cup Cherry tomatoes
- 4 whole Eggs
- 1/4 cup Parmesan cheese
- to taste Salt and pepper
Instructions:
- Cook the pasta according to package instructions, then drain and set aside.
- Heat the olive oil in a large pan over medium heat.
- Add the finely chopped garlic to the pan and sauté until fragrant.
- Add the spinach and cherry tomatoes to the pan and continue to cook until the spinach has wilted and the tomatoes start to burst.
- Push the vegetables to one side of the pan and crack the eggs into the other side. Cook until the whites have set but the yolks are still runny.
- Add the drained pasta to the pan and toss everything together.
- Season the mixture with salt and pepper and sprinkle with Parmesan cheese.
- Serve the pasta hot, topped with an extra sprinkle of Parmesan cheese and a crack of black pepper.
