Healthy French Breakfast Pasta

Ingredients:

  • 200 grams Whole grain pasta
  • 2 tablespoons Olive Oil
  • 3 cloves Garlic
  • 2 cups Spinach
  • 1 cup Cherry tomatoes
  • 4 whole Eggs
  • 1/4 cup Parmesan cheese
  • to taste Salt and pepper

Instructions:

  1. Cook the pasta according to package instructions, then drain and set aside.
  2. Heat the olive oil in a large pan over medium heat.
  3. Add the finely chopped garlic to the pan and sauté until fragrant.
  4. Add the spinach and cherry tomatoes to the pan and continue to cook until the spinach has wilted and the tomatoes start to burst.
  5. Push the vegetables to one side of the pan and crack the eggs into the other side. Cook until the whites have set but the yolks are still runny.
  6. Add the drained pasta to the pan and toss everything together.
  7. Season the mixture with salt and pepper and sprinkle with Parmesan cheese.
  8. Serve the pasta hot, topped with an extra sprinkle of Parmesan cheese and a crack of black pepper.
